This is mainly for scoreboard usage, if a player goes AFK, their name on the scoreboard is obviously "[AFK] Username". However, if the player logs off while still AFK, their scoreboard name then says they are AFK even though they aren't even online. Is it possible to make it so that it auto-changes them to the non-afk team for that colour when they log off?

It's impossible for a datapack to do anything to an offline player though conventional means
I have an idea to "fix" this but it's not great and would require significant changes and could clear the list of colors for offline players (and restore them when they log on)
Ah, I didn't know doing stuff for offline people isn't possible. Removing the colours when offline and restoring them when online is not a bad idea. That means you have a way to know when people are online or offline by looking at the scoreboard and what colour their name is.
