The ax210 is officially supported on 5.10, and Pop 20.10 is still on 5.8

Use the mainline tool for this.
The ppa does not currently offer a version for Groovy Gorilla, but can be installed using:
sudo add-apt-repository ppa:cappelikan/ppa
sudo apt update
sudo apt install mainline
So I'm building it from git.
Prerequisites
sudo apt install gettext libgee-0.8-dev libjson-glib-dev libvte-2.91-dev valac aria2 lsb-release aptitude
Clone and build
git clone https://github.com/bkw777/mainline.git
cd mainline
make
sudo make install
Find the latest mainline kernel
sudo mainline --check
The output of this should look something like:

And say yes when pointed to the kernel you want.

So the kernel is good. Let's see if things changed for the wifi.

This means we also need the firmware. We can try updating linux-firmware
, but this will only install the version for Groovy Gorilla from the PPA, which is for kernel 5.8. So it's of no use.
Remember: It says we need iwlwifi-ty-a0-gf-a0-39
to iwlwifi-ty-a0-gf-a0-59
As for Bluetooth, we get:

So we need firmware for both WiFi and Bluetooth
Let's look at the site that is mentioned in the dmesd output.
That takes us (via google) to the kernel git site
Look for the youngest age commit, currently 2020-11-30 (or just the latest after that date).

It takes some time, it is around 300MB
Uncompress the file with tar -zxvf linux-firmware-7455a36066741a6e52fba65e04f6451b4cdfd9c4.tar.gz
Then copy the firmwares to /lib/firmware
With sudo cp -ax * /lib/firmware
from the uncompressed folder.
Now reboot.
A quick check:

And it appears on gnome-settings and connects just fine. Perfect.
Checking for Bluetooth:

Still gives:

which means it cannot read the new firmware, so we need to investigate the location of the file and why it is not loaded.
Note: It appears even 5.10.1 cannot identify the *Bluetooth, also known as Intel Typhoon Peak Bluetooth, USB ID 8087:0032 properly.
On a post here it seems the patch to make the kernel identify it is merged for 5.11.
And so we wait.
