Somehow this has passed us by(-election).

"In a by-election the returning officer selects the closing date for nominations. Polling day must be no earlier than the 17th day and no later than the 19th day after nominations close." https://commonslibrary.parliament.uk/research-briefings/sn06609/

Unless we're going to manually add the date, we can simply display: "between seventeen and nineteen days before [polling date]."
