Add CI check for out of date mainnet config files #3173

In #3145 a script to update the mainnet config files was added. We should check in CI that these files are up to date. Take into account that our local version will not be equal to the nix version as our's will be yaml and contain documentation.

Partially addressed with #3269. We need a comparison with the nix generated files.
