Building GRASS fails on darwin #36365

Issue description

The build fails at the very end failing to make a symlink.

ln: /Library/Documentation/Help/GRASS-7.2: Permission denied

Steps to reproduce

nix-shell -p grass

multi-user?: yes

version: nix-env (Nix) 1.11.15
