sender email spoofing not working with gmail

Hi I'm using a Gmail account in the configuration settings as a SMTP mail configuration.
But while sending emails I try to spoof the sender's email to say foo@example.org. But when the email is received in the targets inbox it shows that its from the Gmail account instead of foo@example.org. How to rectify this ?
