define & document recommendations for common logging configurations

We should improve our documentation in order to enable users to understand how to setup some of the common configurations that users need from the Router within various environments.

This partially falls within the umbrella of #1840.

Some of these have common off-the-shelf options that the Router is fully compatible with, but could benefit from being explicitly stated:

• logging to a file
• logging within Kubernetes
• logging within Docker
• logging to different log facilities / remote log drains
• log rotation techniques
• etc.

So, overall, improving the documentation for this to ease the adoption journey.
