Investigate Economic Test and Documentation Coverage

Expected Behavior

We should be aware of

Test coverage

• how well all economic parts of the protocol are tested
• what mechanism we can trust
• where we should add tests and increase test coverage
• where we should be careful when changing parameters and mechanisms.

** Documentation coverage**

• what economic protocol parts are well documented
• How economic mechanisms work, e.g. stability, epoch rewards, stability fee / demurrage
• Protocol economic parameters and it's settings and their impact on the protocol depending the value they are set to

Current Behavior

• We know that the stability mechanism is pretty well tested, but don't have a good overview over other economic parts of the protocol. E.g. Epoch Rewards functionality is barely tested.
• We know that some economic documentation, e.g. epoch rewards, could be improved
