Update tests for Clarinet v2 #41

All tests do not work anymore for Clarinet v2. Therefore testing section and projects should be updated. We can link / draw inspiration from the Hiro docs Unit Tests With the Clarinet SDK. (Particularly there are Unit Tests for counter)
