Request for documentation on zig-zag feature

We should create documentation our zig-zag feature (sometimes called "index intersection"). It's a feature that's popular with some customers.

Zig-zag is a performance feature that allows us to leverage multiple indexes to optimize a single query that filters on at least two columns that are not found in the same index.

I had a customer ask about this feature during a training & it's a really cool feature.

Related to this ticket on undocumented 19.2 features (which noted that zig-zag is now enabled by default).
