When building locally with build-locally.py, getting git error fatal: detected dubious ownership in repository at '/home/conda/staged-recipes'

I'm not sure this issue is limited to "staged-recipes", but this is where I encountered the issue so I start here.

@conda-forge/staged-recipes

When trying to build PR #26778 locally using python build-locally.py, I get a git error: fatal: detected dubious ownership in repository at '/home/conda/staged-recipes'

I'm running this on an M1 mac. Repro:

1. Checkout this PR
2. Run:

export DOCKER_DEFAULT_PLATFORM=linux/amd64
python build-locally.py

3. Select 1 for linux64.
4. Observe result
