Switch back to cosmos/relayer image in e2e tests

Summary

Currently, we run the e2e tests using a fork made by Damian in order to handle additional type registration needed for solo machine and localhost. After v7.1.0 is released and cosmos/relayer can add the types for localhost, we can remove the fork and use the defaults supplied in interchaintest.
