- 1 large or two small garlic cloves
- 4-6 anchovies
- 1 tsp dijon mustard (or more)
- salt and ground pepper
- 1/2 cup EVOO
- 2 tbsp freshly squeezed lemon juice, more to taste
- 1 egg
- 4 oz freshly grated parmesan
- Blend everything except parmesan
- Toss with romaine + kale mixture. Serve with grated parmesan on top
