Good summer lunch |
- 8 oz rotini pasta
- 2 Tbsp tarragon white wine vinegar
- 1 tsp dijon mustard
- 1/2 tsp dried tarragon, crushed
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 c fresh blueberries (or grapes)
- 1 cup shredded cooked chicken
- 1/2 cup sliced celery
- 1/2 cup chopped green peppers
- 1/4 cup chopped parsley
- 1/4 cup mayonnaise
- 1/4 cup yogurt
- 2 Tbsp toasted almond slices (optional)
- Cook pasta, drain, add vinegar, mustard, tarragon, salt + pepper; toss
- Cool completely; add remaining ingredients; mix well.
- Serve on e.g. butter lettuce leaves
