Ingredients
- 1 1/2 c dry lentils
- 1/4 c chopped parsley
- 1 1/2 c thinly sliced white onion
- 1 c julienned red bell pepper
- (optional: lettuce leaves + tomatoes)
Dressing
- 1/2 c olive oil
- 2 Tbsp lemon juice
- 1 Tbsp white wine vinegar
- salt + pepper
1 lb flank steak
Cook lentils (15 min approx). Make dressing by combining everything.
Marinate lentils etc. in dressing for four hours.
Grill steak until rare, about 2 min per side.
Slice thinly across teh grain. Toss with lentils. Serve on lettuce leaves with tomato wedges.
