Lemon Chicken

Ingredients

  • 2 chickens, 2 1/2 lb each, cut into quarters (or 8 pieces)
  • 2 c fresh lemon juice
  • 2 c flour
  • 2 tsp salt
  • 1/2 tsp paprika
  • 1 tsp pepper
  • 1/2 c corn oil
  • 2 Tbsp grated lemon zest
  • 1/4 c brown sugar
  • 1/4 c chicken stock
  • 1 tsp lemon extract
  • 2 lemons sliced paper thin

Steps

  1. Marinate chicken in lemon juice over night. Drain thoroughly and pat dry. Fill bag with flour, salt, pepper, paprika, shake well to mix. Shake chicken in bag to coat completely.
  2. Preheat oven to 350ºF. Heat oil in frying pan; fry chicken a few pieces at a time until crisp, about 10m per batch.
  3. Arrange chicken in a single layer in baking pan and sprinkle evenly w/ zest and brown sugar. Mix stock and extract togetehr adn pour over chicken. Set thin slices of lemon on each chicken piece.
  4. Bake 35-40 minnutes until tender
