Ingredients
- 2 chickens, 2 1/2 lb each, cut into quarters (or 8 pieces)
- 2 c fresh lemon juice
- 2 c flour
- 2 tsp salt
- 1/2 tsp paprika
- 1 tsp pepper
- 1/2 c corn oil
- 2 Tbsp grated lemon zest
- 1/4 c brown sugar
- 1/4 c chicken stock
- 1 tsp lemon extract
- 2 lemons sliced paper thin
Steps
- Marinate chicken in lemon juice over night. Drain thoroughly and pat dry. Fill bag with flour, salt, pepper, paprika, shake well to mix. Shake chicken in bag to coat completely.
- Preheat oven to 350ºF. Heat oil in frying pan; fry chicken a few pieces at a time until crisp, about 10m per batch.
- Arrange chicken in a single layer in baking pan and sprinkle evenly w/ zest and brown sugar. Mix stock and extract togetehr adn pour over chicken. Set thin slices of lemon on each chicken piece.
- Bake 35-40 minnutes until tender
