Ingredients
- 1 1/2 slices white bread, crusts trimmed
- 1/6 c milk
- 3/4 c lb of ground beef (or other meat)
- 1.5 Tbsp vegetable oil
- 1/2 medium onion, finely chopped
- 1.5 large garlic cloves, finely chopped
- 1/8 c minced flat leaf parsley
- 1/4 tbsp ground cumin
- salt and ground pepper
- 1 c chicken stock or broth
Steps
- In a small bowl, soak the bread and milk for 5 minutes. Squeeze the bread and discard the milk. In a large bowl, combine the beef, with the bread, 1 tbsp of the oil, the onion, garlic, parsley, cumin, 3/4 tsp of salt, 1/4 tsp pepper and mix well. Shape the mixture into 2-inch meatballs. Flatten them slightly.
- heat some oil in a large skillet. Add meatballs and cook over moderately high heat, turning once, until bronwed on both sides, about 5 minutes. Transfer the meatballs to a bowl.
- In a large saucepan, bring the chicken stock to a simmer. Season with salt and pepper and and the meatballs. Simmer over moderate heat, stirring occasionally, until meatballs are heated through, about 10 minutes.
- Transfer to a a bowl and serve.
