Ingredients
- 1 3/4 lbs new potatoes, scrubbed
- sea salt and freshly ground black pepper
- 6 boned chicken thighs, skin on (that's important -- alternatively bone a chicken)
- Olive oil
- 2 boxes of cherry tomatoes (600g)
- Bunch of fresh oregano, leaves picked.
- 1/4 cup of extra virgin olive oil
- Red wine vinegar or lemon
Steps
- Salt and pepper chicken and potatoes
- Mix oregano, olive oil, vinegar-or-lemon together
- Add chicken, potatoes, tomatoes, and sauce in a baking dish
- Toss
- Bake 40m at 400º F
