Roasted beets with orange and ginger

Ingredients

  • 4 medium beets (about 1.5 lbs)
  • 3 tbsp olive oil
  • salt and freshly ground pepper
  • 1 medium orange
  • 1 1/2 tsp sherry vinegar
  • 3/4 tsp grated fresh ginger
  • 1/4 cup pecan halves, toasted and broken in halves

Steps

  1. Steam beets; peel and quarter them; set aside
  2. Cut thin strips of orange zest; peel orange; use half and cut up flesh in chunks, and set aside.
  3. Squeeze juice out of second half. Mix with vinegar, ginger
  4. Toss beets in sauce, sprinkle with pecan halves
