Eclipse Che docs image causes a failure in che-docs PR check

Describe the bug

It is not possible to use current Eclipse Che docs image to perform a build, which causes certain PR checks to fail.

We must figure out what causes the error in the antora build.

Current workaround to this, is to use older image quay.io/eclipse/che-docs:86a1883, where this problem doesn't exist.

1. Create any PR to che-docs, and look at Build and validate pull request PR check to fail

Expected behavior

PR check should successfully complete.
