Choose payload format per topic

Hi,

One very useful feature to me would be to be able to select the payload’s format for each topic. For example, I use AWS shadows that are all in JSON, but my payload is sometimes in a binary format like ProtoBuf, and I cannot see them both in MQTTX as one of them will be scrambled.
