Using the default app created by react-native-cli, and changing the "Devices" to either "Universal" or "iPad" will cause the app to appear to have a 16:9 body and thus have a scroll bar unnecessarily.

Wait, this is simply due to my misunderstanding of how the iOS simulator works. Sorry about that, everything works great if I scale the simulator to a lower zoom.
