We don't recommend using the built in mongo helm chart to run the operator in production. You should use a "real" mongodb installation and have the operator configured to use it. Let's update the operator bundle and the setup instructions to explain how to do that. The quickstart will continue to use the built-in helm chart for mongo, but the real install instruction would recommend doing a proper mongodb installation.
