Describe the bug

When using the mutate package, if a v1.Layer is added to an image after a subject is added, the subject never ends up in the resulting image manifest. The other way around works just fine.

To Reproduce

Failing test is here:

Expected behavior

The subject should not be removed from the image manifest when layers are added.
