Adding Prometheus metrics support to exit-apps

In order to improve the overall monitoring of our systems and in the future the monitoring of community nodes, we need to add some meaningful monitoring metrics to the exit-app application.
Still needs to be identified the most relevant metrics, but as a starting point we should include:

• Performance metrics to measure the latency observed
