In the sense of the GDPR and with regard to guest mode, it would be useful to have such an option when creating events.

What do you think about always hiding the participants from guests? Or should there really be an option for this?

In Guest Mode it shoudl always be hidden. When logged in there should be an option to hide it. @luke-
