Makes half a dozen pancakes.
- flour
- sugar
- baking powder
- salt
- soy milk
- flax seed
- coconut oil
Mix dry ingredients:
- 1 1/4 cups (156g) flour
- 3 Tbsp sugar
- 1 Tbsp baking powder
- 1/4 tsp salt
Mix in wet ingredients:
- 1 Tbsp group flaxseed meal mixed in 3 Tbsp hot water, let sit for 1 minute
- 1 Tbsp coconut oil, melted in microwave
- 3/4 cup (180ml) soy milk
Cook the pancakes. Each pancake should be roughly 1/4 cup. Get the pan rather hot, but not smoking.
