- 1 large eggplant, diced
- 1 large zucchini, diced
- 2 cups sliced mushrooms
- 15 oz can chickpeas (drained)
- optional other veggies, such as broccoli or frozen peas
Ideally the eggplant:zucchini:everythingelse ratio is about 2:1:1.
- oil/butter
- 2 tsp cumin seeds
- 1/2 tsp caraway seeds
- 1/2 tsp fennel seeds
- 2 tsp garam masala
- 1/2 tsp asafoetida
- 1/2 tsp turmeric
- 2 tsp paprika
- 6 oz can tomato paste
- 1.5 tsp salt
Add the veggies.
- 3 cups half & half
- ? curry leaves
- 2 tsp lemon juice
