Use official knative-operator helm chart

Description

Once there is a new release of the helm chart for the knative-operator, the index.yaml will be created and updated and then we will have the possibility to use the official helm repo.

knative/operator#1931

Because the helm repo release workflow is configured with github release trigger, it will be only created once there is a new helm chart release.
