Are there example uses of LEAP-Pangeo? Maybe, case studies from Pangeo?

The best resource for this right now is probably https://gallery.pangeo.io/. There are lots of example workflows there. My favorite is probably https://gallery.pangeo.io/repos/pangeo-gallery/cmip6/.

Unfortunately binder.pangeo.io, which was used to make those examples interactive, is currently disabled (see pangeo-data/pangeo-binder#195). However, we are working with 2i2c to bring it back soon (see discussion in 2i2c-org/infrastructure#919).
