I'm aware of this problem, tried several ways including the one you mentioned above but no luck. It seems that Fire TV is fetching the banner image from their own server instead of pulling it out from the APK.
I own 4 different Fire TV Sticks and I can confirm that the stock launcher banners can't be customized in any way by the end user in the stock amazon launcher: I tried every modification of the APKs and it was a mere loss of my time.
One has three possibilities to go about that: 1) have the developer submit the banners to the app store, indeed - best, cleanest solution and it works for everyone 2) create a shortcut APK and have it to display the custom banner instead (online free creator at https://atvlauncher.trekgonewild.de/) allowing you to finally recognize your desired application but every time you launch the app shortcut, the main app will be displayed on the recent apps section again with its default ugly icon, even if you previously hid it via the right click menu - easy solution but a bit messy 3) install a custom launcher that will show the correct app banner embedded in the APK (not possible if the latest amazon OTA updates were applied which inhibit custom launchers, unless one roots the Fire TV device and reverts the OTA updates) - great option but at this point in time only for the serious tinkerers, quite risky otherwise I guess
Current version of app do not display banner on home mostly cause it's not from App Store.
