Do you have any clue whether is possible to extract acceleration (as done for velocity) from nuscenes data?
Moreover, would it be possible to extract it and inteprolate in the same way to have consistency ?

I think nuScenes data doesn't provide acceleration information for surrounding vehicles. For the ego car, if you have the Canbus package installed, you can perhaps get something related to acceleration such as throttle/steering values or even acceleration itself. But I suggest you calculate it with velocities if you really need it... The velocity is already interpolated, so just use numpy.diff to calculate acceleration.
