Add tests for mappings/settings

We currently exercise the ES setup through the integration tests in the gp-finder app only. There are a few rudimentary tests in this repo implemented in bash scripts for the ES config/setup. There may be benefit in having tests in this repo to establish that (for example):

• the docs have been imported
• a full text search works
• a geolocation search works
• [plus others TBC]

These may benefit from being implemented in a more structured test environment (e.g. python/nodejs).
