basically we want it so that anyone can setup the AV for Tuesday meetings

I think there are two parts to this, one is Server side documentation, and one is end user documentation... and my end user documentation I mean more like "its a Tuesday meeting, I know nothing, how do I get the Jitsi meeting going" like include stuff like, "This is the computer set aside for Jitsi client", "This is how you set up the mics", "This is how you do a sound check".... maybe this should be split up into two tickets...
