[Feature] Gear Support

First let me thank you for this - as a fellow coder this is impressive work!

I was wondering if it's possible to add a configuration for the gear used.
I have my Garmin cycling activity using a certain bike by default (my regular bike) so when this runs it auto assign those bike to the peloton activity.

Seems that Gear is not a concept supported natively in the FIT file spec: https://forums.garmin.com/developer/fit-sdk/f/discussion/367586/editing-gear-in-fit-file/1760483#1760483

It may still be an option to use the Garmin Connect API to try and set the Gear. More research needed....
