It looks like the jruby docker tag ending in "jdk", which is currently used in the Dockerfile, defaults to OpenJDK 8, so I think we should probably investigate compatibility with new java versions, and at least specify a version to be explicit (i.e. 9.3.6-jdk8, 9.3.6-jdk11 or 9.3.6-jdk17)
