Describe the bug

The current plot2d rendering for notebooks has problems with standard unit symbols such as $\mu$.

Steps to reproduce the behaviour

This issue can be seen in the cost landscape plots at the bottom of this notebook: https://github.com/pybop-team/PyBOP/blob/e34099fa90223763dc738a8aba47e929354c811f/examples/notebooks/multi_model_identification.ipynb
