Are you okay with making this the official Docker image for Nikola, and would you be willing to help us out with a Docker image for Coil CMS?

Sure. It's working well for me so far. I haven't tried Coil yet but am willing to give it a go.

Setting up Coil CMS should not be hard. This guide was written on Arch (though you should use Python 3/the python uwsgi plugin)

I’ll add this image to our documentation.
