Remove default prefix binding in /etc/tmux.conf

Can the binding of prefix change from C-b to C-a in /etc/tmux.conf.erb be removed? This seems like a personal opinion and should not be the default.

The embedded prefix in the default recipe template gets evaluated from the attribute default['tmux']['session_opts']['prefix'] = 'C-a' which it can be changed in the cookbook wrapper where you are going to consume this tmux cookbook. However, I do agree if you are going to set a default, leave it with what the software intended with, that is 'C-b'.
