We have a static build of Gitea hack/platform/gitea-install.yaml that hasn't been updated in a long time. while its working now, it might be worth updating this to a newer version, and possibly having this auto-bump by using something like a helm chart (either via the CLI or a flux HelmRelease, so when new updates are published they are auto updated.

@kirederik bumped it last week it turns out! The helm chart part still stands.
