How to find out the value for a byte string for a test ?

I am developing a quirk for the Saswell Tuya TRV and I don't know how to proceed with the following test case that I try to imitate, see here.

I would like to write similar tests, because I believe they will improve the coverage.
However, I do not know how to find out the byte strings with the correct data to test in my case.

Could you please help me understand or refer me to where I can find more help?

I pushed the current state to my repository. The test case I am working on is viewable here.

As a concrete example/question: How do I know what data to put into the byte string ZCL_SASWELL_TUYA_ROOM_TEMP ? I believe once I understand that then I can complete the tests.
