feat(privacy report): pass flag option for subject mapping override #478

Description

Allows users to override data subject mapping by providing a file path to their own mapping. This file is then read during the scan process

I've added test coverage that shows my fix or feature works as expected.
I've updated or added documentation if required.
I've included usage information in the description if CLI behaviour was updated or added.
PR title follows Conventional Commits format
