This PR will redesign the docs and hopefully fix #681
Documenter.jl is nice but some things are annoying, such as left align.
Here, we use DocumenterVitepress.jl, which works with the same code, but generates nicer (more modern) docs. While we're at it, we can check and refactor the docs a little and fix bugs.
