documentation for version 1.0.x used a link to the 1.0 documentation, which does not work due to the fact that it is set as the default version

Correcting typos, removing references to the old name in the text, commands and directories, and much more. In general, PR is aimed at improving documentation in order to get rid of the outdated name and improve clarity for the end user
This PR also has documentation for version 1.0.1, but it is not enabled by default at the moment.
