Replace release process

Description of change

Due to new security restriction in Jimdo, we are not able to use semantic-release anymore in this public repo, therefore we are moving to more manual version bump process, at least for now.

1. run npm version locally
2. this will automatically run the postversion script, in order to add the new tag to github
3. merging/pushing to main or beta branches will run the npm-release script
