update docs on fetchGit shallow clone behavior #9704

Motivation

follow-up on #9258 as suggested by @DavHau

Context

duplication with fetchGit is still an issue, but maybe for another time.

Priorities and Process

Add 👍 to pull requests you find important.

The Nix maintainer team uses a GitHub project board to schedule and track reviews.

Small docs PR. A few accuracy quibbles from @DavHau and Eelco, but should be easy to address. Assigned to @edolstra.
