LGTM! Nice addition @jacques-lebourgeois 🚀

It introduces a warning when running: npm run typedoc: [warning] EChartsProject, defined in ./src/theme/ODS.project.ts, is referenced by ODSChartsTheme.theme but not included in the documentation.. This warning can be tackled in a separate PR.
