openssl was sneaking in non-static libraries, so put a stop to that.

The brotli repository have broken their build on MacOS, I've raised an issue there and put a quick fix in place.

Option to build ffmpeg and x265 from latest source now added
Building x265 from latest source requires less patching as the apple patch has been incorporated and built upon.
Fix for libaom builds, which now rely on runtime cpu capability detection which used to be broken for arm and so was disabled in the script.

Topaz Update and SDL2 fix version

ffmpeg can now be built with Avisynth+ support
New Topaz functionality from newer TVAI versions.
SDL2 had to be pinned to a release version as main is now SDL3 and is incompatible with the ffplay build.
