Hello, so what would be optimal workflow for using Wolfram inside VSCode ? Correct me if I'm wrong.

Install those three:

https://github.com/WolframResearch/WolframLanguageForJupyter (jupyter kernel)
https://github.com/WolframResearch/vscode-wolfram (language server)
https://github.com/njpipeorgan/wolfram-language-notebook (documentation and syntax highlighting)

Manually add your fixes

Use .ipynb files inside vscode or wlnb ?

both works

use ipynb, then install jupyter kernel + language server
use wlnb, then jupyter kernel + wlnb extensions.
