updating horusec workflow to use release candidate

Description

The idea of ​​this PR is for Zup open source projects to collaborate with each other during test releases. For that, this pull request changes the Horusec installation to fetch the latest version between the candidate release and the latest version.
That way, if the release candidate has a bug, we can identify it before it's released.
